Spinach Pasta Recipe

Ingredients:
Whole wheat or multi grain penne pasta 1 pound
Garlic 3 cloves
Goat cheese 2 oz
Cream cheese 1 oz
Salt 3/4 tsp
Black pepper ground 1/2 tsp
Baby spinach leaves fresh 6 oz
Parmesan cheese grated 2 tbsp
Direction:
Boil salted water in large pot.
Then add pasta, cook until it is tender and stirring occasionally for about 12 minutes.
Then mince garlic in food processor.
Then add goat cheese, cream cheese, salt, black pepper, and half spinach leaves.
Then blend until mixture is smooth and creamy.
Keep cheese and spinach mixture aside.
In meanwhile, put remaining spinach leaves in a large bowl.
Then drain pasta, reserving 1 cup of the cooking liquid.
Put cheese and spinach mixture over pasta mixture and toss to coat, adding enough reserved cooking liquid to moisten.
Season pasta with salt and black pepper.
Then sprinkle cheese and serve.
