Italian Chicken Pasta Salad
Ingredients:

Dried elbow macaroni 3 cups

Chicken cubes 1 cup

Onion diced 1/4 cup

Cucumber diced 1 cup

Cherry tomatoes halved 1 cup

Fresh parsley chopped 1/4 cup
-
Feta cheese 4 oz
-
Olives chopped 1/2 cup
-
Red peppers chopped & roasted 1/2 cup

Extra virgin olive oil 1/2 cup + 2 tbsp
-
Vinegar 1/3 cup

Direction:

​Boil salted water in large pot.

Then add macaroni and cook until al dente.

Then drain it and rinse with cold water.

Then put macaroni pasta in large bowl, drizzle 2 tbsp oil and toss it so that it does not stick.

Then add chicken, onion, tomatoes, cucumber, olives, peppers and parsley.

Then sprinkle salt and toss it.

Whisk vinegar and 1/2 cup olive oil in small bowl and pour over salad.

Then toss it, take out in serving dish and serve.
